I don’t cook. And I don’t bake. And I think that is one of the reasons that I don’t feel like a grown up yet. But I do make pancakes. Because they are easy. And I make them to reduce the sugar and wheat. My 21 month old also adores them so I know he will have a gigantic meal without too many nasties.
These pancakes aren’t vegan because of the egg but you could use an egg replacer. I also use organic Spelt, buckwheat and Soy milk or Almond milk.
Buckwheat and Spelt pancakes
1/2 Cup of Buckwheat flour (Coles brand)
1/2 Cup of Wholemeal Spelt flour (Coles brand)
1 tsp Gluten free baking powder
1tsp Maple Syrup
1 tsp Vanilla Extract
1 Cup of Almond or Soy Milk.
Mix and cook.
Top with Yoghurt. I use Vanilla Jalna. It is so thick and creamy plus packed full of all those good probiotic cultures.
Add defrosted blueberries. Again you can buy organic, I just hadn’t this time. If you defrost them, you get that gorgeous red sweet juice to pour over.
And then I add a little maple syrup over the top at the end.
So delicious and filling and the toddler and I get 2 days out of this mix.
